Yummy vegetarian chopped liver spread
1 can sweet peas (I use Le Sueur Early Peas15 oz) drained (reserve liquid)
1-2 large onions browned well (carmelized) in oil
1 1/2 cup walnuts (fresh or toasted)
Place above ingredients in a food processor or blender, and process until pureed to desired texture. I add reserved liquid as needed if mixture appears too dry. Allow to chill in fridge overnight, so it solidifies. May be served cold or at room temperature. Enjoy as a dip with veggies and/or chips or as a spread on bread or crackers.
